Brother Marcus is a unique restaurant concept that brings the flavors of the Eastern Mediterranean to London. Brother Marcus offers three distinct dining experiences and faced operational challenges with its previous POS system.

The challenge

Brother Marcus aimed to move from pen-and-paper ordering to a tablet-based system and although their previous POS provider, offered a tablet option, the app’s performance was unreliable — it ran slowly and frequently issued duplicate tickets. Additionally, outfitting multiple sites with tablets required a substantial investment.

Back-of-house operations were also a challenge. “With our previous POS, we had to manually push menu updates to all sites; a process that could take up to 15 minutes and disrupt service as tills were unavailable during the upload,” said Diego Bardi, Head of Operations.

The solution

After years of operating with a less agile system, Brother Marcus adopted Toast in early 2024, drawn to its speed and flexibility. Reflecting on the switch, Diego shared,

Brother Marcus’ adoption of Toast positively transformed their operations:

  • 2 Hours of Time Saved Per Week: Menu changes are pushed to all locations instantly without disrupting service. “Since moving to Toast, our operations are more efficient and we’ve saved 2 hours a week on menu updates,” said Diego.1

  • Enhanced Order Accuracy: “With the Toast, we no longer worry about lost tickets,” Diego explained. With the Kitchen Display System, chefs can see exactly what’s been ordered and fire dishes when ready.

  • Data-Driven Insights: Brother Marcus was relying on verbal reports about kitchen efficiency. With Toast, they now have concrete data to analyse performance. “Toast has really helped us track kitchen times and compare performance daily and weekly,” Diego said.
